i wanted to find out what the difference is between the murata knives you stock?

These knives are completely different. You can purchase either a western or "yo" handle or a Japanese style "wa" handle.
The difference is also in thickness and weight. So they will perform a little bit differently.

I like the wa handled ones better. The western ones are handle heavy in my opinion. Save some money and get the wa handled.

was also wondering if both types of knife are actually made by murata himself or his workers

The knives are both made by the same shop with the same guys. Usually in these small blacksmith shops they work together to make the knives. Most shops divide tasks by specialty. One person hammers them out, one guy does the grinding etc... Other shops rotate so everyone does each job on a different day to cross train everyone on each skill. I'm not sure how Murata runs his shop but I plan to visit him at some point and I'll ask him once we meet and I take a tour of his facility.
