Moritaka or something else?

Hi,

I am writing to you because I am going to buy a new 240 gyuto soon.

I have been looking a lot at your Moritaka 240 gyuto (supreme series).

The things that are really of concern to me right now are:

1) the size (240)
2) a minimum HRC of 61
3) a 50/50 edge
4) relatively thin and lightweight
5) an octagonal handle

Hi Gary,

Give us a couple more answers to these questions and then we should be able to give you some suggestions.

1. Are you right handed?
2. Do you know how to sharpen on stones?
3. Sounds like carbon steel is your preference?
4. Price range for the knife?

Answers to your questions:

1) Right Handed
2) Know how to sharpen on stones and love to do it.
3) Yes, looking for a carbon steel
4) Up to $225 is what I am looking at, but would go higher (max $300) if it was a spectacular deal on a spectacular knife.

Are you looking at the KS profile Moritaka Supreme? If so, it's reported to be a great knife! It's a little longer at 250mm vs 240mm, but shouldn't be a deal breaker.

My fave 240mm's are the Tanaka Sekiso Damascus and the Richmond AS Laser. The Konosuke HD or White #2 are even thinner and lighter and very nice, too.

Moritaka knives are nice.

The AS Laser is another great option....not sure it's in stock though.

I have the KS 250 and liked it so much that I bought a 150mm petty and a 300mm Yanagiba. All are really great knives!!

I can highly recommend the KS 250mm. It is light, sharp and just the right size for a home kitchen (I have a pretty large kitchen though). Even in a smaller environment, the KS would still be fine. For me the length is about perfect and the sucker gets wicked sharp!

You ask about the handles . . . I really like the rosewood handles on mine!
