moritaka ks vs kanehiro aogami

Does anyone know if there are any substantial differences between this two beasts?

Kanehiro 240mm Wa-Gyuto


Moritaka KS 250mm

One major difference: the Kanehiro is AS core, clad in stainless steel, while the Moritaka is AS and a softer carbon steel/iron with a kurouchi finish.

VOVA <> First, I wouldn't call the Moritaka a beast while the Kanehiro is quite a beast.

MK is correct, in that, the Kane is stainless clad while the Moritaka is fully reactive.

The Moritaka is substantially harder, as well; they register, on average, 3 points higher on the Rockwell scale.

The largest difference is in profile. The Moritaka is a Masamoto KS "replica" which is a Sabatier 10" chef's "replica". All three are, in fact, different profiles, but they bear resemblance. Very Funayuki-ish with a short tip third & flat belly...

The Kanehiro is a big stiff knife. Very blade heavy. Relatively, heavy overall as she is san-mai. Pretty tall around 54mm at the heel which is at least .5 cm taller than the Mori, and closer to .75 cm.
