Nice knife, but not for me. Pattern, weight and edge profile are terrific but just not going to see much use in my block. Used for prep on perhaps four meals and is in perfect condition with factory edge still on it. Asking $150, shipping included.

Reactivity doesn't seem to be anything compared to the other iron clad knives I've got. Slight patina on the core steel, but the cladding hasn't been an issue, at least not through onions, tomato and some jalapenos. Honestly haven't used it that much, but it's not like the Shimo which would go nuts the second it hit anything acidic.

As an FYI, the pics I posted were from Hutch. He never used the knife and swapped my Shimo for the KS. Happy to provide some "live" pics, but again, haven't had this knife more than 10 days so nothing really different here except some blue/purple on the edge/core from the light work it's seen, but will polish that out anyway.

The cladding is not very reactive at all on my Moritaka AS Santoku. Actually the core steel isn't super reactive either - in my use.

I didn't think it would last long.

That KS profile is one you either love or hate.
Personally I really like it but some do not connect.
I can also tell Moritaka knows Aogami Super quite well.

That was a good deal on a KS, and yes the knife was brand-new, never used or cut anything when I sent it to chip less than two weeks ago. Out of curiosity chip, what do you have in mind to replace it?
