Received my Moritaka KS 250mm...on a SUNDAY! Can't believe there was mail on Sunday...Merry Xmas to me!
Anyways, it is a nice looking knife (haven't used it yet though)...but looking at the bevel - I have never seen a bevel so small. In other words, the bevel must be much less than 1mm...I don't think I could even draw a line on it with a sharpie to test the angle for sharpening.
Any suggestions for sharpening this beast? I am assuming the angle is about 15 degrees or slightly less?

Awesome! Yes they basically convex the edge down to a point. It's a pretty easy knife to sharpen. Just choose an angle you want to sharpen it at and start grinding. Your stones will win and impart the edge you want. I usually go about 10 degrees on each side on Moritakas. They can hold that edge easily but they're a little more prone to chipping when they're steep. Not a big problem if you know how to sharpen.

I watched your videos of sharpening the Moritaka 210mm Gyuto (still have 1 to go I think). It appeared you put on 2 bevels. Is the large silver area if the knife a bevel? Is that the 10 degree bevel? And then a micro bevel at like 15-18 degrees at the edge? If so, is that what my knife has now or just a convex bevel to the edge?
