I held a Moritaka Sujihiki a few weeks back, and I noticed that it was actually fairly deep (blade height). I have been looking for a deeper knife, with lots of knuckle clearance, both for a sujihiki and gyuto. I was wondering if you roughly had the heights of both the Moritaka gyuto's and sujihiki's in the 240 & 270.
Also, I was just wondering if you know some of the deeper sujihiki's (either carbon or stainless). I know there's the richmond addict 240 gyuto that's fairly deep which I'm interested in as well.

Yes the Moritakas are tall. They often won't fit in the universal sayas because of this.
I only have 2 of these in stock to measure:
270 yanagi (really a 2 sided suji) 36mm tall
270 gyuto 53mm tall
