So, after a chance to play with them...
The moritaka is a clear win -- had the 150mm Tojiro, which is a great knife, but the Moritaka is in another league. Ligher, harder, and better balanced.
As for the Konosuke, I finally had a chance to sharpen it this morning. Now it qualifies as a scary knife. I put it at 20d included (lowest the edgepro goes), symmetric, and you were right, the chosera stones were fine on it; it was easy to sharpen. Obviously I can't say if it was the *best* choice, but it's an awesome knife, and I'm definitely liking it a lot so far. It'll be interesting to see how the blade holds up and what I think of it in a few weeks.
I also recently got a new toy -- a USB 50x optical microscope, so I'm enclosing pics of the edge after each round on the EdgePro, just in case you're interested. The biggest visible difference is between the 800 and 2k; the transitions between 2k and 5k, and from 5k to 10k are much smaller. However the chromium oxide after 10k made a very noticeable difference. The red region in the pics is a table cloth, and the blue region is painters tape protecting the rest of the blade from scratches.
