I want to thank you for all of your help. Two more questions if you don’t mind…
Would the Moritaka Gyuto 240mm be an ok knife for an all around chefs knife?
How much longer is anticipated on the Kikuchi 240 being out of stock?
This should allow me to make my decision.

Yes it would make a great all around chef knife. It's carbon so that's an issue for some people.
The TKC is delayed a little. Look for it after xmas but I'm never certain when stuff will show.

Yeah, the Moritaka's will be a good all around knife. They're on the thin side and make a great cutter, but not anorexic overall.
