Moritaka 210 Aogami 2

Ready order and I want to make sure the handle is octagonal like the Moritaka Supreme. The pic on the website shows the knife with a D Handle and I am a lefty. Also is the handle rosewood and buffalo horn and is the grind 50/50. Thanks

BIKEMAN <> Yes, the handle is octagonal rosewood, and I'm nearly positive the ferrule is horn just like the Supreme. The cutting edge is a 50/50 grind, but I'm not sure about the blade. I can't imagine it's too asymmetric, if at all.

Thank you for your response. As I mentioned this will be my first carbon steel blade. I have been using cast iron skillets for over 30 years so I know about drying after use and keeping the patina. What tips do you have for caring for the blade and creating patina.

Caring for a carbon isn't any different....it just requires that care right away. Don't wait to clean it off.

A patina will develop naturally. If you want, you can force it with mustard....or speed it up by cutting alot of acidic produce.
