Miyabi Kazen edge

I purchased the above referenced knife and am not sure but think it does not have the double bevel of 50-50 I was expecting. The sides of the blade are different than each other near the edge. Please let me know if I do have a bevel of 50-50 and I will happily use the knife. Your site did not describe the edge in detail, but two other sites mentioned that it was evenly ground on both sides.

Hi James,

We all get the same knives from the same company which is Henckels. They say that the knives are evenly ground but usually when they sharpen the knives on a fast moving belt sander the last side that gets swiped will show a little more bevel. It doesn't matter since after the first time you sharpen it you can grind it anyway you want.
