I use a mineral oil / beeswax paste. Comes in a tube, a little goes a long way.
I do my boards 3 or 4 times a year depending on use.
Straight mineral oil is OK too, as it is fairly thick oil.

my 2 cents.
i use Howard's butcher block conditioner a couple times a year.
