I can't answer this one. Assuming I never chip my blade I would say a Chosera 1k or Shapton 1500 and a strop afterwards, but eventually I'll need to thin the blade and the 1k won't do that.

So 2 stones minimum for me.

I could do everything with CBN and Diamond plates except for aesthetic sharpening if I had to.
