masazumi 120 petty

just got it...
Very happy with the handle, slim and very clean.
Thin with a slight flex but very durable.
Cuts very well. can peel an apple w/o having to push and pull the blade to saw it.
can just push through and cut the apple clean w/o damaging the flesh.

The only problem im having with it is that right after I cut peeled the apple there was some discoloration (yellowing) no patina, just straight away rust.
Idk if its an isolated incident, but its suppose to be stainless right?

Otherwise a great knife, cuts just above well enough and cuts very smooth , and looks just good enough to let it in the knife bag but not feel guilty using it to use to cut cakes out of the pan.
When I think about it,(for me) a knife doesnt have to be super beautiful, nor does it have to cut "the best".
For me it should be a knife I enjoy using so the joy can be passed onto the food,
and i reach for this knife for all small knife purposes (sometimes even for gyuto purposes)

I apologize. The steel has some Cr in it but obviously not enough to make the knife stainless. When we bought them with "Swedish" steel I assumed it was a stainless variety even though Sandvik makes tons of good carbon steels.

If you force a patina on the knife it will slow down the reactivity. Also, if you want to trade it in I would be happy to give exchange it for a stainless knife. :)
