In the beginning of the video there is a shot of the Kanji on an alleged "Tsukiji Masamoto" Granted... by the way, looks like he is trying to cut off his left hand.

Keep in mind that both the Tsukiji and Sohenten Masamoto knifemakers are more of a collective so that different knifemakers make individual knives of various types - yanagis by one guy and gyutos etc by another and the various steels, etc. So it's meaningless to compare the two Masamotos and more meaningful to compare each knife. When visiting the store, picking out knives was like picking fruit at the market. Grab a fistful of them and pick out the best one. The same can be said of Aritsugu in Kyoto and Aritsugu in Tokyo (Tsukiji).
