Re: masakage yuki 240 vs richmond laser AS 240

I only sold the Richmond because I got a Kohetsu (Started with the Kohetsu santoku and loved it)
I don't fault you for the Richmond, it's plain, functional and just great knife :D

Umberto wrote:The Yuki looks cooler, the laser has a nice easy to sharpen steel. Both knives will likely serve the same purpose. You can cut turnips and kohlrabi all day long on either knife. Just be mind of how you press into the blade. I use the Richmond Kohetsu with a thin edge...I sometimes use it to slice through hard cheeses and it doesn't chip. The limitations seem to be solid frozen blocks of meat :)

The White #2 of the Yuki is not easy to sharpen?

White #2 is very easy to sharpen, easier than AS but neither is difficult.

Plain? A little oil n flitz and she is a sparkling beauty ;)

I wavered between the same 2 knives. Yuki has more personality, AS laser has the better handle. I ended up with the AS laser.

I own both actually, 240 AS laser and a 270 yuki. They are both thin behind the edge, the yuki is almost as thin as the laser. The yuki has more character as everyone has said and I think an attractive handle. I believe the yuki will have a larger handle than the laser and the white #2 is easier to sharpen but will not keep the edge as long.Being it's thicker the yuki will of course weight a little more.

Yep, no delaying around here. Things get snatched up quickly. I'm sure they will be back in stock in two weeks(forum joke)

I haven't seen a Richmond personally, so.... I'm starting to get a number from the Masakage line of knives (read as a fan of). I was looking to pick up the Yuki when I was shopping for my gyuto, but somehow the Koishi was able to cut the coin out of my pocket :)
Sometimes it comes down to a coin toss. You'll be happy either way.
good luck

The Laser is lighter, AS steel, both are the same height.
I think the Laser handle is better, handmade by Isiah Shroder, maple and wenge, it's octaganol, not oval.
Both knives have good steel, each has its pluses and minuses.
I guess it all comes down to what matters the most to you.
