MowgFace - Haven't spend too much time with either knife, but based on the short time I've used them I prefer the Yuki. Thinner, sharper OOTB (didn't touch-up either one), has a SILKY smooth handle, is a smoother rocker. On top of that, the convex is done slightly better as it transitions up the blade. They both have the same finish, but the Yuki is smoother. The Kanehiro seems to be built a lot tougher though. Haven't used them enough to judge steel characteristics, but I'm sure they'll both satisfy expectations. At this level of craftsmanship, the difference is steel characteristics aren't a whole lot different IMO, but maybe someone more knowledgeable can give you a better view on that.
