I got the 240 Yuki in and love it! This is a sexy knife IMO. I know that's not important to everybody but it makes me want to dice a mountain of onions just to look at it. I will post a more complete review later after I put my own edge on this knife. So far great with everything from onions to herbs, tomatoes, etc. Went nicely through butternut squash and back to thin tomato slices. I was worried about the 3mm spine thickness at heel but that appears to narrow down quickly within the next 2 mm along the spine. The spine narrows at the tip... no wedging on onions. The blade feels thin behind edge but I have not measured it yet. Overall very pleased.
