What are you considering "heavy work" wben you mentioned the anryu santoku? I currently have an anryu 210mm guyto and a 120mm petty. Santoku is 6.5 inches. In what situations do you find a santoku to work better than a petty or chef knife? My current heavy duty knife ia wusthoff chef.

Mostly all hard vegetables right now. My baby has been on a carrot, sweet potato, and squash (oh how she loves any kind of squash) binge the past couple months. I have a 240 Richmond Laser AS but I like how rigid the Anryu is when going against a butternut squash. I used to use a cleaver for the squash because the Laser just felt like it was bending (I know it wasn't to any real extent). Then I got the santoku. I think it is in the sweet spot of being small enough to work as a petty (small and nimble) but can kill anything hard at the same time. I can transition from an acorn squash for the kid to tomotoes and mozarella for the wife without missing a beat.
