I really like the maruyoshi Santoku and I was wondering if anyone can tell me about the sharpness of this knife. Thank you

This is the same knife as the Hattori HD, Ryusen and is known to be one of the best implementations of VG-10 stainless steel, with a very high quality heat treatment. The knife should get very sharp and stay sharp for a reasonable amount of time if you do your part in sharpening and maintaining it.
