Why must I always forget to recommend the Richmond Damascus. This is actually my favorite damascus knife on the site, I keep assuming everyone remembers it. The blade is really a Yoshikane, and it's an incredibly nice cutter. The pattern is certainly a unique one and the grind is just beautiful. This blade has a little more weight than the Kikuichi and personally I like them better. http://www.chefknivestogo.com/rida.html

The ATS-314 steel core is a proprietary Hitachi steel and I can't seem to find the formula anywhere. I know that it's stainless and it takes a very fine edge though. Getting a pair of scissors that uses it is not cheap, they usually start in the $300-$500 range.
