Joe i think you're absolutely right. i've tried to show her the "pinch" and the "claw" as chad ward refers to it but she doesn't listen. i personally don't see using a knife that touches the board less that is less than 7-8 inches long at minimum to be useful, but to each his or her own. and i'm certainly not an expert or a professional. this is just fun for me. i'll take another crack at her but last time we cooked together, i had her try my mac mth-80 and she thought that was too long!
