As I suspected. Looking forward to trying out both knives. My son who
has friends who are professional cooks is also looking forward to
trying out the knives. Couple of questions:
1. are you folks planning on adding more M390 knives to the Artifex line
2. what sharpening stones or diamond plates that you carry are
recommended for M390 steel knives?

I don't currently have plans to do another knife style but that could change. We have to buy large volumes and I'm afraid of getting 100 of something and then having it on our shelf for a couple years.
The shapton glass stones work well on this steel.

I'd love to see a 180 Nakiri in M390. Be a sweet deal...
