Look at the Addict 2, tall blade, CPM 154. For a stone recommendation, Bester 1200 and Rika 5K gets my vote!

I would also suggest the Konosuke HD Funy/Gyuto.

The Addict 2 looks great. I like the steel and especially love the price tag on it. I also absolutely love the Konosuke Funy with its high bevel, id prolly go for blue #2 if i went that route.

Ive been looking at the richmind addict made in cpm154 and carbon 52100. Im rather unfamiliar with the two steels. How do they compare to eachother in terms of how acute an edge they can take and how long it can hold it? I assume the carbon steel will be easier to sharpen based on what ive read and dont really have a problem dealing with the maintenance of carbon.

I have a 52100 Addict 2 incoming this week from Mark. 52100 I am guessing will be a bit easier to sharpen than the CPM154. Both should take and hold a nice edge really well though. Either should work really well; I have one of the non Carbon Addicts I use on acidic veggies and stuff where I don't want to use the carbon blades.

The CPM 154 Addict will take a steeper edge, but it is harder to sharpen. The 52100 will come back with honing a little easier.
