I recently became intrigued w/ Japanese knives and now I'm looking to purchase my 1st gyuto. After lots of reading, I'm leaning towards a Tojiro DP 210mm gyuto. However, I specifically want the one w/ the wa handle. I saw some links to that gyuto posted on different forums, but those links no longer work.

Did Tojiro discontinue their DP gyutos w/ the wa handle?

Not the DP, and not stainless like the DP, but Here is a couple Wa 210 Gyuto Tojiro's.

This might be the closest knife in terms of price, performance, etc.

That Artifex is a much better knife than the DP.

I believe they did discontinue the wa handled DP. Mark sold it for a while....then it vanished. Too bad, too.....it was a nice knife for the money.

I'd also check out the tanaka ginsanko; really really great knives.

If you find out you are set on a wa DP, maybe taz here on the forum could hook up the handle?

But there are better knives than the Tojiro that come in wa for less than a handle conversion. Artifex GT is one of them.

I'm not completely set on a wa DP. Currently I'm taking a look at all the suggestions given so far...including the artifex.

I'm also consider this Goko 240mm Damascus b/c of the sale price and it's a beaut. http://www.chefknivestogo.com/goko.html I've asked around about the Goko but no one has heard of it.
