Looking for sujihiki and petty

Hello,

I have just recently sold my konosuke 270mm HH sujihiki to my sous chef and I was think of getting a new sujihiki to replace it. I really liked my Konosuke because it was light and a laser but not sure is that the way to go with slicers. I have to say my cap would be $300, also I am looking to complete my knife kit with a petty(preferably around 150mm and wa handle). My cap for a petty is $150

Another thing is that I want to dive into the world of carbon knives but the carbon clads also intrigue me. Maybe the slicer I want completely carbon and the petty either or.

Haven't personally seen this petty, but Fujiwara makes some sweet arse blades and I've never been disappointed in their blade work. Handles....well their western handles suck hard.

I Second watercrawl on this one! You won't regret it. I also recommend the Moritaka Supreme Petty here http://www.chefknivestogo.com/moao2.html. I have the 130mm and its one of my favorites.

Such a hard decision, both seem like awesome knives but the Moritaka knives I really want to try. :P

The handles have a pretty cheap feeling to them, but the blades make them worth it.

I have only seen a few petties, do you want a belly on it or should it be more flat?

Also I saw the Tanaka too, the blade seems awesome. Damascus and blue #2!

Regarding the belly comment... I had meant to say, "if you like some height...

The belly it has is a relatively consistent radius... nothing exaggerated. I do like some height in a 150 petty, and I do like a hair of belly. I find at this length it becomes a dramatically more versatile tool with. With little height, they are nothing more then large pairing knives or small slicers... to me.

All the knives you're interested in are great tools, and you'll never know which you like best until you've used them all. Enjoy whichever it/they might be! :mrgreen:
