My story probably familiar.
Home chef of high regard among friends and occasional casual catering jobs. Never trained. Cooks great food with modest attention to knives. Used to just go buy an inexpensive one as they wore out.
Discovered japanese cutlery and eventually your great site several years back. Have had family order a knife from you each Father's day for the past 3 years.
Still working on my knife skills. Really need some better training there.
And of course you don't just throw a $300 knife away when its worn.
So now I begin to learn proper sharpening. I've watched some demo vids but still feel I just want a knowledgeable voice to set me on the right path.
Would you please reccommend a basic sharpening tool kit for me? Then maybe some vids/books/resources I should go check out to properly use them.
A basic kit that you reccommend to get started is what I will ask my family to order for me this year's Father's day.

You have to make a decision up front on whether you want to free hand sharpen or if you want to use the Edge Pro.
