I've been using a Tojiro DP 240 gyuto for the past 2 years and would like to upgrade to a 270 gyuto because I do a lot of prep during the day. I work in high end catering so stainless steel is probably preferred and I'm open to either a wa or yo handle type. I was planning to spend around $200, maybe a little more if necessary. I've been sharpening the Tojiro on Shapton glass stones (320, 1,000 and 4,000). The Richmond Ultimatum looks promising. Any suggestions you have would be very much appreciated. Thanks!

The Ultimatum is a great knife, I think you'd really like it. Another you should consider is the Kohetsu, a lot of knife for the price. AS core in stainless clad: http://www.chefknivestogo.com/koaosu27gy.html

For a Wa handle I'd go with the Kohetsu, everyone seems to love them and AS will give awesome edge retention
For a western handle you could look at the hiromoto which also has AS or for a little more the masamoto which is fully stainless

Not the Konosuke HD version?!?!
The Ultimatum is praised by nearly every one who owns it. It's more of a robust knife at the edge....not a super thin edge, so it can take some abuse better than the "laser" knives".
The Kono HD version is quite a bit above your budget, but certainly a really great knife.

. This is a quintessential profile in incredible semi-stainless steel that will not react though it can "stain" with grey watermarks. This knife is a fantastic medium-weight with great F&F that will excel in your application. Trust me on this one.
