I'm looking for a petty/suji style knife of 180-210 mm. It should be a slicer (proteins), so I'm looking for a laser-style knife.
I've already got a Suisin Inox honyaki gyuto, which is great, but now I'd like to try a different brand. I was thinking of Konosuke or Richmond laser, but both are sold out.
Any knives you guys are thinking of?
