Looking for Kohetsu Aogami Super 210mm Gyuto alternative
The Kohetsu Aogami Super 210mm Gyuto is out of stock. I have no clue if Mark will get it in a month or 12 months. (I did the email thing on the item page).
The reviews on this knife are very good. I get the feeling that this knife is a very good bang for your buck at the $150 to $200. (according to some review I saw).
So my question is. If the Kohetsu Aogami Super 210mm Gyuto is out of stock what should I consider getting?
If the Kohetsu Aogami Super 210mm is the "best deal" at this price point do I now have to spend $250 to get equivalent knife (performance, edge retention, quality materials, thin etc).
So recommend 2 knives
1. $ 150 to 200
2. $200 to 250
are either knives as good as the Kohetsu Aogami Super 210mm

Well, the Kohetsu 210mm AS is a laser class knife. The AS steel outclasses the Kono Lasers in terms of edge holding in the white #2 version, so maybe look for the Kono HD? Or the Richmond AS Laser 210mm. Tanaka Sekiso 210mm may be one to look at as well, but it's all carbon, and it is a bit heavier than the Kohetsu, but still cuts incredibly well.

Do you think the Konosuke HD 210mm Wa-Gyuto is equivalent/better/worse than the Kohetsu Aogami Super 210mm?

You may not need an alternative. I have 200 of the kohetsu 210mm AS gyutos in the air right now so I should have them very soon (2-5 days).

Even though I literally just put an order in, I'm considering the 240 of this knife
