Mark,

I'd like to try getting into a single bevel white steel traditional
Yanagiba. I'd like to stay in the $300 range for this first knife. I think
300mm is right. Can you give me your top recommendations? Is a knife in this
price range one that will be worth it?

There are several good ones in that price range. First tell me a couple
things:

Are you right handed?
Do you know how to sharpen?
Do you want stainless or carbon steel?
Is this for home or work?

Right handed.

I sharpen freehand on a set of stones I bought from you. I know a
Yanagi has some special considerations but I'm willing and interested
to take those on.

White steel. I'd go for #1 but I understand it is more expensive, so
would settle for #2.

Home. This knife will be reserved for specialty slicing tasks.

300mm Length with saya and ebony octagonal but I think I'll have to stick with a
magnolia handle (blonde color) to stay within budget.

Hi David,

Konosuke has a white #2 satin finish, 300mm yanagi, ho wood octagonal handle for $281 + 17 for saya.

If you want the ebony handle version it would be 336 + 17 for the saya.
