Looking for a work horse at home that can take some abuse, such as cutting large bocks of cheese, frozen butter etc as needed.

Use a soft steel beater for abuse since the edges are wider and the steel is tougher. I keep a wusthof in my kitchen for just such tasks. Wusthof also has a great warranty service so if you do kill it they will repair or replace it.

will take abuse better than any gyuto.

I have a Victorinox Fibrox in the kitchen just for those types of task, my use and abuse knife. I break out the J-knives for the fun stuff.
