Looking for a workhorse knife that can take abuse

Fri Oct 25, 2013 3:01 pm

Looking for a work horse at home that can take some abuse, such as cutting large bocks of cheese, frozen butter etc as needed.
Cheers

Use a soft steel beater for abuse since the edges are wider and the steel is tougher. I keep a wusthof in my kitchen for just such tasks. Wusthof also has a great warranty service so if you do kill it they will repair or replace it.

Either a soft steel chef's knife ala the Fibrox or some such, or a western deba:

will take abuse better than any gyuto.

However, many of the workhorse labeled gyuto's will do both the tasks you mentioned very well. Something like:

JOHN DOE <> Adam hit the nail square on the head with the Tojiro recommendation as, IMO, it fits your request very well.

I have a Victorinox Fibrox in the kitchen just for those types of task, my use and abuse knife. I break out the J-knives for the fun stuff.
