Well, without regard to price (<$200 in reality); Japanese made; any handle, although I prefer I think western style handles … handle depends on overall design of the knife. Steel – hi carbon content ok …

Are we talking paring or petty? Title says petty, description says paring.

Petty, the Suisin Inox Honyaki petty's are the thinnest I've ever seen.

My fault. I kind of use these terms interchangeably. Just like I use chef knives and gyuto.

What about the Konosuke petty's? The Fujiwara FKH/FKM I have seen are pretty thin, too.
