What is the weight of the 18 gyuto compared to the whustof. I cannot see the tang on the knife. And the 7.6 oz I cannot compare to the german knives. This seems close just not sure if it will be too heavy.

I don't understand. The weight is 7.6oz and you have the Wusthof to compare that too. I don't even know what exact knife you have so just weigh it and compare.....

Down to two:
I am a little concerned about carbon steel and the maintenance? Is the effort of the carbon worth it, what do I do if the steel rusts a little. Will it ruin the finish to remove the rust?
