Looking for a petty

Hello everyone.

im looking for a petty.

1. Are you right handed? - right handed
2. What type of knife are you interested in (gyuto, nakiri etc..) - petty
3. What size knife are you looking for? - 120 - 150mm
4. Do you prefer carbon or stainless steel? - doesnt matter
5. Do you prefer a western handle or a Japanese handle? - japanese handle
6. How much did you want to spend? - $300
7. Do you know how to sharpen? - no

The one i'd really like to get is the teruyasu fujiwara petty but its not in stock. :(

The first question people around here will ask you specifically for petty advice is...

What are you planning to do with it?

If you plan to use it as a mini-Gyuto it would be best to have some height to it such as something like 30 mm plus.

If you are planning to use as a paring knive/off the board then you don't need 30 mm plus. And 150 mm might be a little long for this.

Home cook or professional?

Some will also say buy something cheaper so you have money to buy stones and learn to sharpen. Or add more money to budget for stones.

A $300 knife that is dull is the same as a $20 dull knife.

How are you planning to keep it sharp?

If you answer those questions you will get better advice than people telling you the $300 petty they dream about or the petty they just bought for a specific task.

Stevo - I'll sometimes use a tall 150 petty in-hand for paring, but IMO a true 90mm (3.5") paring knife works best for in-hand paring tasks.

If you want something longer for more utility/petty duties: cutting lemons/limes, shallots, and other smaller produce, sandwiches and the like a taller 150 Petty is the most versatile.

Just to add - tall petty knives are just MY preference. Others may like shorter more utility type knives.

Also, an FYI - the Tanaka petty I referenced is not clad in stainless. It's a completely reactive blade, edge and cladding. Just so you know. If you will be using it on lots of citrus or other acidic foods full stainless or stainless clad might be a wise choice. The pros here can comment as to the validity of my thinking on this ;-).

I agree on the stainless...

The petty's gets use on tomatoes and citrus (I live in So. Cal) year-round.

I grow Pomelo, Navel orange, Meyer lemon, Kumquat and Kaffir lime and the carbons react too much even though well patina'ed.

Guys - not to hijack Steveo's post but what are your thoughts between Moritaka Supreme 165mm and the Masakage Mizu Petty 150mm? Both nice and tall for that mini-G thing. Will use between a Shun paring and a gyuto to be named as well as a german 8" for the heavy going.

already ordered the tanaka petty. wont be cutting to many citrus or tomatoes. i do prefer taller knives as well.
