He is right handed
Unfortunately I can’t answer most of those questions except:
· Like to spend up to $400
· I would guess he does know how to sharpen and would be open to a Japanese handle (seems more appropriate)

Does he have larger or smaller/medium size hands? Is he a thinner guy, or does he have big meat hooks for fingers?
These knives had various size handles and also some have taller blade heights with are normally better for guys with larger/bigger hands for knuckle clearance to the cutting board.
Also, do you think he would be more meticulous about caring for a carbon steel knife that can rust, or would he be better served by a stainless or semi-stainless that requires less care?
You get lots of suggestions from the CKTG "knife consultants" here on the forums. You might also consider added a couple of appropriate sharpening stones to your gift package.

He would have medium hands and he is ~6 foot well built
I would assume he is fairly ggod at looking after things but probably better with one that does not require as much care

With a budget that high, and without others qualifications, it's just one of many I could choose. But, it's a fantastic knife....great look, great grind, great handle.

For a gift is it better to go for a great knife like this or say a chefs knife and another knife?
Also can I post to Australia or given import issues is it easier to have "Chef Knives to Go"?
Reason is want to wrap it nicely but may be easier to have it sent directly?

I am partial to the Takeda AS Gyuto... I know two other people who have the same knife and they love it as well and use it everyday prepping food. It is awesome to work with... looks cool... and is handmade by the Takeda family... I personally have the 270 mm which is too big for some people but just perfect for me...
