Hey there,

I bought a chef's knife and the Shapton 2pc starter set from you a while back based on your recommendations. I think I want to get another stone with a courser grit. Which do you suggest under the 1K that I have now? I'd also like to purchase a stone holder so I'm assuming the Shapton Sharpening Stone Holder is the way to go.

Lastly, I purchased the Tojiro DP Gyuto 240mm from you and it's a great workhorse. What would you suggest for something with a thinner blade for doing precise vegetable cuts?

Dave, I would suggest adding the Shapton Glass 320 grit to your lineup. Mark sells a really nice stone holder as well: Or...get it with a diamond plate for flattening your stones (if you don't already have one):

The Shapton holder is nice, but not nearly necessary. The Stone holder Steve linked to is more than adequate.

Another great low grit stone is the Latte:

However, if you already have and like the GlassStones....I'd agree with Steve that the 320 is the obvious choice.

For a thinner knife than the Tojiro, you'll want something we label as a laser.

A good knife in that category would be the Kohetsu:

It's carbon core and stainless clad.
