Looking for 2 Japanese Knives.

1. Are you right handed? Yes Right Handed
2. What type of knife are you interested in (gyuto, nakiri etc..) Gyoto and Petty
3. What size knife are you looking for? For Gyoto 240 and Petty 180 or 210.
4. Do you prefer carbon or stainless steel? Stainless or carbon with low maintenance
5. Do you prefer a western handle or a Japanese handle? Japanese
6. How much did you want to spend? About 200 or so a piece maybe 450 total
7. Do you know how to sharpen? I have only sharpened with old oil stones but will learn the Whetstone.

I work on the line with limited space. Small cutting boards. High pace.
I have a few questions.
What is the differences between the Konosuke HD2 Series Vs HH seriese?

What is Differences between the Richmond Artifex, Addict and Laser series?

What are differences between the Misono swed, 440 and moly?

Any recommendations that require low maintenance. Honing is fine Sharpening once a week or every 3-5 days.

Honing steel recommendations.
I was looking into the F Dick 2000.

If I had to purchase 2 stones what would they be or do I need more?

Do I really need to purchase or even use a strop?

HD2 versus HH is different steels. HD2 is a semi-stainless tool steel. HD2 will hold an edge better, but is not as totally stainless as HH. Can't recall if I've heard what HH uses as a steel, but it reminds me of 19C27....a good stainless steel.

Misono Swedish is carbon, 440 and moly are both stainless. I like the Moly Misono's....or did when they were a better value. Never tried the 440 series though.

On the wa-petty's, my preference is 210mm.....among my most favorite knives is the 210mm wa-petty from Suisin

Of the one's you listed, I'd pick either the HD2 210mm or AEB-L Laser in 210mm.....both outstanding knives.

For the gyuto, of those listed....the 240mm Laser....but it's a laser, so please understand that before pulling the trigger. Very thin knife.

I don't use or recommend a honing steel, can't comment on that one.

Need a strop...no. I don't use one. I do strop on felt to remove burr's, but even that isn't NEEDED. You can strop on the Rika to remove the burr, or newspaper, or pull through a cork/rubber/etc.

Win, no. Different, yes.

I guess, at the end of the day, if you were getting those two knife styles, I'd get one in HD2 and one in AEB-L.

So HD2 240mm gyuto and Richmond AEBL Laser wa-petty or Richmond Laser gyuto and HD2 wa-petty.

Just to try each out. Both are fantastic knives and both series are considered "laser" style knives. Only major difference is in the steel and both are very good steels. I prefer AEB-L, but the HD2 steel is all of just as good practically.
