MKSJ - Wondering what you think about the Sakai Takayuki. Like you were, I'm thinking about something like a 210 petty or 240 sujihiki and am somewhat biased toward the petty since it will be used occasionally and I'm a home cook. How do you like the length?
By the way, I bought the Anryu Hammered 210 gyuto and really like it a lot. Awesome knife!
