I just got the DP deba. What a monster. I had no idea how heavy and tough it was. I think it would cut through anything. Glad I got it.

Congrats on your new DP. I just caught this thread and have been reading it with great interest after having somewhat similar needs: a stainless Western-handled knife to handle heavier-duty tasks that could backup a MAC Pro Mighty chefs. I was teasing the idea I should keep at least one German on hand for such things and was considering a Messermeister Meridian Elite. I wasn't planning on deboning chickens or carving up a bluefin, but it would be nice to know the knife on hand could do such. I'm just not sure if I need the extra oomph the Tojiro sounds like it provides. I'm open to and would appreciate any suggestions.
