Learning to sharpen.

Hi Mark:

Thank you so much for making "learning to sharpen " you tube videos. I would like to start sharpening my own knives because Shun charges $5 and plus $9 shipping now for their lifetime sharpening. I usually go to a local shop that sharpens knives for $3.50 but $20 dollars for hand sharpening.

I own a set of Wusthof Grand Prix II ( Chef knive, pairing knife, utility knife). I also own a Z willing J Henckel boning knife and Cleaver. The japanese knife I own right now is the 7 inch hollow ground Santoku by Shun.

Please recommend sharpening stones that I will be able to use on all my knives. The cleaver I do not need to sharpen often because I hardly use it. Do you think I should get the 5 piece sharpening set or 2 stone grit only?
Any advice will be great.

On the side note, what do you think of the Gesshin Ginga Gyutto 210 mm?

Never tried that brand of knives. I'm sure they're good. Jon knows knives very well.

If it's in the budget, the set Mark linked to is a great initial investment for not a ton of money. If used correctly, the set could effectively be used to:

Thin the shoulders
Fix minor damage
Sharpen well past any typical factory edge sharpness
