I had some questions about the Kurouchi finished knives. Does the finish tend to wear off over time? If so, what does the steel look like underneath? If it is coming off, is there a method to go ahead and finish removing it? I have been looking at some gyutos with this finish:
i.e. Moritaka and Tanaka.

If you look at my recent thread I attached a picture of a Moritaka with the finish removed. I polished it up to a 600grit. The finish will wear off depending on usage rate but I expedited it with a bit of acetone and SiC sandpaper.

Some KU finishes are kind of applied. A KU finish that is truly from the forge will not wear off as quickly as those that are kind of applied.

Some Ku finishes are Forge Scale like Adam mentioned, others are a coating that is put on and baked on during the forging/heat treating cycles. The Forge Scale method is the most durable.
