Konosuke White #2 vs Richmond laser

Fri Apr 05, 2013 3:31 am

I am new to the forum and I am looking for a nice gyuto on the market. Can anyone tell me what the differences are between the Kono White #2 and the Richmond Laser aebl or Aogami Super? I am currently using Shun knives, which are pretty good.

Also, how is the Richmond Laser aebl to sharpen up? Does it sharpen faster than the Aogami Super version? How do these knives, as well as the kono White #2 take an edge? Any advice would be very much appreciated.

Okay, Richmond Lasers first:

The Aogami Super one is stainless clad, and the AEB-L one is stainless altogether.

The Konosuke White #2 is not stainless at all.

The AEB-L Laser and Konosuke White #2 are close to equal in thinness, I don't have 2 side-by-side to compare, but you can maybe ask Mark. Both knives are true lasers.

All 3 of the knives will beat the pants off of your Shuns.... in my opinion.

Personally I prefer the Richmond Laser (both versions) to the Konosuke White #2, although I'm splitting hairs here. Konosuke knives are wicked good, all of them.

The AEB-L one will sharpen maybe slightly faster than the Aogami one, but honestly you probably won't notice at all since they are both so thin behind the edge. The Kono White #2 takes an edge just as well as the other 2, but the Aogami Super one will hold an edge longer than the others.

Thanks Shaun, I think I'll look at the lasers. Some of the carbon steels on the site look really nice though...

By the way, what do you prefer, the Richmond lasers or the Konosuke White #2 series?

AEB-L is a joy to sharpen. :) Probably one of the easiest to sharpen....as is white (any of them).

Of the three, I've never seen the AS Laser.

Of the other two, the Laser is very nice. But, so is the Kono.

IMHO, pick based on whether you want carbon or stainless. Both very similar knives.
