Like the profile of both which would you choose also thinking of Fujiyama series white steel not sure which is best what do you guys think! Want something real thin behind the edge more laser than anything!!

I'd get a Konosuke Fujiyama white steel gyuto.

I'm curious if there is a big difference between the Fujiyama series and the regular is it just a difference in maker of is the heat treat/ forging different?? Anyone have experience with both is it worth an extra 100$ give or take?? I know the Sakai Yusuke is a good knife an they also make an extra thin series so was curious if anyone out there has used one or has tested one?

The Sakai Yusuke steel is much softer than the HD.

just checked the site and they're both white steel and are both 61 RC.
