If your open to anything, might i suggest this:

Masakage Koishi 240 video knife

I love my 210 and, if it wasn't for that pesky paying rent thing, it would already be mine.

Another possible option is to see if JWesley1 is still interested in a Kono HD2 Gyuto - Funy/Gyuto swap: wtt-konosuke-funayuki-gyuto-t3976.html. You could buy the regular 240 HD Kono and trade him for the Funy version. Just a thought if the HD is what you want.

Well, seeing as the kono I wanted wasn't in stock

http://www.chefknivestogo.com/kohd240gynew.html
and
http://www.chefknivestogo.com/kohdfu24.html

are both out of stock I pulled the trigger on a takamura, I'm really interested to see how powdered steel compares to W#1 and AS

Seeing as the largest difference I can get with a knife would be the handle and weight, a western makes sense to me. I've read good things about takamura, so I can't wait to get it into my hands.

While I really like bolsterless knives, I can't help but love his red handles! lol From what I have read elsewhere it also seems like he and his sons put a lot of thought and care into their knives as well and a big focus on how well the knife cuts! Takamura wants his knives to put a smile on your face, and I can really dig that kind of sentiment from a maker like that. He seems like he's a great guy and cares about what he puts out. I only wish I could have gotten one when Mark had them at the introductory price. ;)

A very classy and very nice looking knife. I can't help but think it would perform just as good as it looks. I think you made a great choice with that one. ;)

Would everyone please quit recommending the Takumi Ikeda Damascus Gyuto? I say this only so one of them can take up a little space in Mark's inventory until I can afford one. ;) This is the time of year the Feds hang onto my money (Medicare deductibles) and I have to figure out how to sell something else to get the Ikeda and a decent point-n-shoot camera for my wife without her knowing, and she knows everything. :( Pointing out that her Elton John tickets were a lot less wouldn't help. I love the look and promise of that knife. I could always just settle for my Fujiyama White #1 Gyuto, I guess...

I have more knives than I could possibly need or use but that itch to buy another just keeps coming back. I have been wanting a Takumi Ikeda Damascus Gyuto awful bad.

Quit talking about it before I think I need one...;)

Fight the urge, Jeff, fight the urge. Just think, you would be depriving one of its rightful home in my knife drawer...

Let me know when they are down to one and I'll swoop in and snag it.

I have that Ikeda page open, and have for the last few days. No intention of buying right now but boy are they pretty to look at.
