Hey Mark -
How has the response on this knife been so far? Not seeing much in the forums as of yet. I tend to like the carbons in terms of sharpness, but this intrigues me. Either way, I'd love to hear your thoughts.

They're fantastic knives. It's one of my "it knives" that I always tell people about. The problem is they're expensive so they are out of the budget of typical knife buyers and the expensive stuff never sells as well as the low and mid range stuff.

For some reason expensive stainless knives like these don't get near the love they deserve.
One of my favorite knives of all time is the Kikuichi stainless Ginsanko gyuto. Expensive as all get out, but a truly great knife.
