The difference between the steels is that blue #2 is harder and holds it's edge a little longer and is a little more difficult to sharpen and theoretically won't get quite as sharp (debatable).

Good knife sharpeners that enjoy sharpening their knives tend to really like white #1. Those that want good edge retention usually go for blue #2.

I'd take White#1 any day of the week after having used it. Both of the Blue#2 I held were slightly thinner/lighter than the white#1, but both were perfectly ground and convexed great.

The White #1 Fujiyama is a slightly weightier knife, slightly, and is still plenty light enough for prep use. I love more blade weight, to an extent, pending it has a good grind, because it aids in cutting. Both knives are non-stick.
