At what angle should I sharpen my konosuke fujiyama gyuto
without it chipping and still get shaving-sharp edge to it?

Sorry I never saw this post. I would sharpen it at about 12 degrees. You can go steeper but you start to risk chipping. 15 on each side is common and you should be able to easily shave at this angle too.
