Anyone have one and can speak for it's flexibility? Was looking at getting an Artifex suji for filleting and slicing fish. Would like to spring the more money for the Kono provided I could use it in the same fashion. Thank you ahead of time!

It's thinner and a little more flexible. Only 1 270 left. We have about 8 of the 300s left, some with blond ferrules.

The 270mm are nice, but bigger roasts and stuff, it's nice to have the extra length. Thinking of bugging Shigeki Tanaka for a 360mm or longer Sekiso Suji :)

I have a 360 Yanagiba and love it, but it is a handful. I'm beginning to scout for a compact and thin 300 suji for the smaller tasks.

I asked to get a blonde one, but I guess if it isn't I'll just have to change wood choice for it's saya ha ha. I don't feel there is much of a point to get a suji any shorter than 300 since I have gyuto's up to 270.
