I can't wait to get my hands on an HD.

It literally depends on what level of stainless-ness you want...

HH - Stainless
HD - Semi-Stainless
Fuji - Barely Stainless

If you can afford it, get the Fujiyama... get the Fujiyama... get the Fujiyama.....

Unless you want or need something less reactive. :D

The HH and HD lines are world-beaters too... flip a coin if you can't decide.. I'm serious! You just can't go wrong buying a Konosuke in my opinion.

Fujiyama series from Konosuke are really nice.

But, like Shaun said....I've never seen a bad knife from those folks.

Thanks guys. Mark said HH. I've heard seriously good things about HD... Fuji is so pretty...but yeah it's getting pricey. Maybe save my pennies and wait for that?

Yes I like the convenience of stainless. The Fujis are hand forged and really nice but more expensive. The HD are semi stainless and the steel is really good but it's a little reactive so it's a good idea to wipe them after using them.

You won't go wrong with any of them.

Kono HD 270mm Gyuto w/ Ebony Handle (either old or new shape)
