No video from me, but I finally got to use mine today! Garlic, mushrooms, peppers, onion, broccoli and potatoes were no match. I took the edge up to a Yaginoshima Asagi J Nat and it had a very nice, clean toothy edge. It had that smooth sticky sharp edge that I love! Edge held up pretty well, too. I am making meatloaf with mushrooms, peppers, onion inside, and then mashed potatoes and broccoli with cheese for dinner tonight. Finally able to cook a homecooked meal and not eat fast food!!!

I can only second other's comments here, the Kohetsu's Aogami Super takes a great edge, I love it.

Great review Shaun and video Aaron. This knife looks like a winner. I am waiting to order the 240mm when it's in stock. Hopefully soon!

I mentioned on FaceBook that I sent your video over to my factory in Japan and they flipped out. They loved watching you blast through that tomato.
